What’s your favorite thing to cook?

Back in the day, I had a cute 1930s bungalow with a beautiful kitchen that was great for cooking and baking. I miss it here in Texas. It changes the way I cook and what I eat.

Being fourth generation Hungarian Gypsy with the dark complexion and dark eyes, I was taught to make the traditional Goulash that translates into a beef stew. In addition, Chicken Paprikas that converts to chicken and dumplings. The main ingredient in both is the paprika that is critical in both dishes. Truthfully, I would only make it in cold weather with snow to shovel to burn off the fat and the calories.

Being health conscious, I earned my American Council on Exercise Aerobic Instructor certification. This encouraged me to eat healthier of using fresh ground turkey instead of beef plus changing white flour based pasta to whole grain noodles. Plus, more fruits and veggies to be eaten raw or steamed.

In Texas, I have chosen premade deli salads and proper portioned frozen meals like Healthy Choice and Lean Cuisine for variety and for taste. Marie Callender’s for when in need of more of everything that is rare. My area has a local BBQ place in the top 100 on Yelp that offers a variety of dishes beyond the traditional meat plates. When I first moved here, I went on food adventures to try new things in new places.

My favorite breakfast is a plain bagel smeared with honey pecan cream cheese plus a cup of English breakfast tea without sugar or cream and brewed in my pink mini Keurig. It fills me up and it gives me sense of peace.

When I was working, I would cold brew green tea without sugar to drink instead of water or pop that kept off the weight and kept me alert.

Food is a journey that usually parallels a life. It changes with obstacles and with blessings in our lives plus our location. Keep your mind, heart and stomach open to expand your pallet.
